Originating around 200 years ago in the ancient city of Mengzi, bridge noodles (guoqiao mixian) are now a specialty of Yunnan province, China. This dish is so popular and well-known that travelers visiting Yunnan, China never miss the chance to try it at least once.

1. Overview of Mengzi Bridge Noodles

1.1 The Origins of Bridge Noodles

Behind this famous and delicious dish lies a touching legend. Around two centuries ago, in the south of Kunming, Yunnan, there was a beautiful lake. A small island rose from the middle of the lake, connected to the shore by a wooden bridge. This island was where scholars often came to prepare for their exams.

One diligent scholar had a wife who brought him bridge noodles daily so he could eat while studying. To ensure the noodles stayed hot upon reaching him, she decided to stew a chicken for broth, then separately packed the ingredients like noodles, meat, and vegetables. Thanks to the glistening oil layer on the surface and a clay pot that retained heat, the broth remained hot enough to cook the noodles and other ingredients when her husband ate them. Nourished by this delicious hot dish, the scholar grew stronger and more focused on his studies, eventually passing his difficult exams. This devoted act of bringing noodles across the bridge daily gave rise to the name "bridge noodles."

1.2 Ingredients of Bridge Noodles

Not only famous for its romantic backstory, the bridge noodles' charm also lies in the harmonious combination of fresh ingredients. Each ingredient plays an important role in creating the distinctive and irresistible flavor of this dish.

The dish uses fresh rice noodles made from rice flour, which are thin, chewy, and translucent. The broth is made by simmering pork or chicken bones, releasing a rich amount of collagen, which makes the broth smooth, sweet, and nutritious. Most notably, the broth is covered with a layer of chicken fat to keep the dish hot for a longer time.

Bridge noodles are served with a variety of ingredients, including thinly sliced meats like beef, pork, or chicken, and seafood such as shrimp, squid, and fish, all cut into bite-sized pieces and briefly blanched to maintain their freshness. Additionally, ingredients like tofu, quail eggs, mushrooms (shiitake, wood ear, straw mushrooms), thinly sliced or shredded, are used. Vegetables such as Chinese cabbage, scallions, and bean sprouts add color and aroma to the dish.

The uniqueness of this dish lies in how each ingredient is served in small bowls, rather than mixed together in a big bowl. Diners will gradually dip the ingredients in the broth in order – starting with the meat, vegetables, noodles, and finally, flavorings like vinegar, scallions, or chili peppers.

1.3 When is Bridge Noodles Eaten?

Bridge noodles are a simple dish made from easily accessible, familiar ingredients. Therefore, visitors to Yunnan can enjoy this dish at any time of the day, without waiting for a special occasion. However, it is sometimes served during banquets, celebrations, or special events.

2. How to Enjoy Authentic Mengzi Bridge Noodles

Bridge noodles may have basic ingredients, but the way it is eaten is unique. To fully appreciate the essence of this dish, you should follow the traditional process.

First, crack an egg into the broth and wait a few minutes, then gradually add thin slices of raw meat, vegetables, and mushrooms to the broth at its highest temperature. Next, add the remaining toppings and enjoy the noodles in their fullest flavor. You can eat as you go, adding more ingredients to keep the dish hot. Interestingly, chrysanthemum flowers are sometimes added to the bridge noodles to enhance the dish's fragrance and nutritional value.

After a few stirs, diners can savor the warmth, softness, chewiness, and natural flavors of mushrooms, vegetables, meat, and eggs.

3. Where to Enjoy Mengzi Bridge Noodles

3.1 Jixin Garden

The Mengzi bridge noodles at Jixin Garden are meticulously prepared. The rice used for the noodles is the finest, and the broth is made from the bones of Xuanwei mountain pigs, Wudingzhuang chickens, and Red Dragon Spring water, a famous Yunnan spring. These ingredients are simmered for hours until the broth becomes rich and flavorful with a milky white color.

Not only offering Yunnan bridge noodles, Jixin Garden also serves a variety of other Yunnan specialties, including appetizers and dishes reflecting the cultural identity of local ethnic groups. While enjoying the bridge noodles, diners can also watch traditional dances.
