Korean soy sauce marinated crab is among the top traditional dishes that you must try when visiting Korea.
In Korean, Ganjang Gejang (간장게장) is made up of two words: Ganjang meaning soy sauce, and Gejang meaning marinated crab. These are also the two main ingredients that make this iconic dish of Korea, especially popular during chilly days.
The dish has been present in Korea since the 17th century and has evolved over time. Initially, Koreans mainly used chamge (a type of freshwater crab from China) to prepare ganjang gejang. However, as freshwater crabs became scarce, they switched to using sea crabs and blue crabs. These crabs are larger but have thinner shells, which shortens the marination time. Despite the change in ingredients, the distinctive flavor of gejang has been preserved and continues to gain popularity.
The preparation process of this traditional dish is quite meticulous. To ensure the best flavor, the crab must be carefully selected—fresh, firm, sweet, and full of rich roe. The crabs are thoroughly cleaned and stacked in an earthen jar, with their shells facing down. The soy sauce marinade is boiled with spices, cooled completely, and poured over the crabs. Every few days, the marinade is drained, reboiled, cooled, and poured back again. This process is repeated 3–4 times over two weeks before the dish is ready.
To eat, the crab shell is removed and the crab is cut in half. You simply press the body firmly so that the meat and roe ooze out. Ganjang gejang combines the natural sweetness of crab meat with the savory richness of soy sauce and the fragrant aroma of spices, making it a perfect companion to a bowl of rice. Koreans often put warm white rice into the crab shell, mixing it with the roe for a deeply satisfying flavor. The dish is also commonly served with fresh vegetables and kimchi.

When eaten, the fresh crab meat and creamy roe of ganjang gejang melt in your mouth, awakening your taste buds.
A more modern version of the dish is Yangnyeom Gejang (spicy marinated crab), which can be enjoyed immediately after being coated with a spicy sauce, without requiring days of marination.
Jinmi Sikdang is a special restaurant that focuses solely on marinated crab, using the freshest blue crabs sourced from the Seohae coast. To ensure top quality and flavor, the restaurant limits the number of crabs served daily, so reservations are highly recommended.

- Ganjang gejang is made entirely from raw crab fermented in soy sauce. Therefore, if you are not used to eating raw food, are allergic to seafood, or have digestive issues, you should think carefully before trying it.
- The quality of the crab greatly affects the dish’s flavor. The crabs must be completely fresh. Koreans typically prefer female crabs in spring (April – June) and male crabs in autumn (September – October) as they provide the best meat quality for ganjang gejang.
- In addition to the sweet, delicate crab meat, the rich, creamy roe is considered the “essence” of the dish and should be savored fully to experience the authentic taste of this Korean delicacy.

Koreans often mix warm rice into the crab shell, blending it with the sauce and roe to enhance the flavor of the meal.
